Ingredients – nuts, dates, raisins, carrots & spices
Once again, carrot cake is something that was new to me. Nowadays, I believe it is pretty trendy to eat carrot cakes in France. This carrot cake mix is so delicious, I actually ate it all for my dinner tonight! If this was a traditional carrot cake, I would be full of guilt but not with this one.
Here is how I made this carrot cake (using a standard coffee mug):
1 cup of walnuts
1 cup of raisins
1 cup of dates (I use saudi dates as they are more sticky)
2 grated carrots
Spices (1 tsp of cinnamon, 1tsp of ginger and 1/2 tsp of nutmeg)
1 cup of cashew nuts (soaked for at least one hour)
3 tbsp of agave nectar
– Blend the walnuts, dates and spices together. Add the grated carrots and the raisins.
– Put the mixture in cupcake or mini muffin tins.
– To do the frosting, blend the soaked cashew nuts and agave nectar. You can add a bit of water and cinnamon.
– Pipe the frosting on top of the carrot mix.
– Et voilà!
