Ingredients – nuts, dates, banana, peanut butter, cocoa powder & ginger
This recipe can be altered in so many ways. You can add layers, use different nuts, use your favourite nut butter, add spices etc. The square on the pictures is made of four layers. They are great wee energy booster and healthy little treats. The squares can get pretty soft so it is best to keep them in the freezer (you can eat them instantly from frozen, they are very refreshing and kind of melt in your mouth). At the very least, keep them in the fridge. I love having a box of them always available, so if I feel like a treat instead of rushing for a chocolate bar I rush for my naughty nutty healthy cutty pretty square!
Here is how to make them (using a standard coffee mug):
Dates and nuts layer
1 cup of dates
1 cup of nuts
1 tbsp of cocoa powder or ginger/spices etc.
11/2 ripe banana
2 or 3 heaped tbsp of nut butter
– For the dates and nuts layers, just blend the nuts and dates together then add either the cocoa powder or the spices. Put baking paper at the bottom of a baking tray and pour the mixture. You will have to press it down so that it covers the entire tray. The tray I use is about 24cm by 18 cm.
– Once you have pressed the first layer in your baking tray, put it in the freezer. Then blend the bananas and nut butter. You can add a little bit of salt if you want. Get the tray out of the freezer (leave it in for about 30 minutes) then layer the banana mixture on top. Put the tray back in the freezer.
– Repeat with at least one more dates and nuts layer or add an extra 1 or 2 layers….or more!
– Keep the tray in the freezer for a good hour before cutting the layers in squares. Keep them in an hermetic box in the freezer or at least in the fridge.
– Et voilà!
